Each tower is assembled from carefully chosen cheese wheels and truckles, graded by size and stacked into an elegant multi-tier display. The base tiers are large, robust cheeses that can bear the weight above — a mature Cheddar or a firm territorial cheese — while the upper tiers move through creamy, soft and speciality cheeses, finishing with a small showpiece wheel on top.
